Ingredients

1 1/4 cups raspberries, fresh or frozen
2 cups natural apple juice
1 teaspoon orange zest
1/2 ounce unflavored gelatin
2 tablespoons fresh squeezed orange juice
Tips
Fresh fruit works just as well as frozen. Get creative with the ingredients: Blueberries, raspberries, and peaches are a great combo.
Directions
Mist an 8x8 square pan with water then line with a layer of plastic wrap, covering the bottom and the sides.
Place the berries, 1 cup of the juice and the orange zest in a saucepan.
Bring to a simmer over medium heat and cook just until the fruit is soft, about five minutes.
Pour the remaining cup of juice into a cup and stir in the gelatin. Let stand for about two minutes, until the juice has absorbed the gelatin.
Transfer the berry mixture to a blender and puree until smooth. Add the gelatin mixture and the orange juice and pulse until combined.
Pour the mixture into the prepared pan. Stir with a spoon to distribute any seeds. Refrigerate until firm, about 2 hours. Cut into 1-inch squares.
