Ingredients

    Carolina Brown Rice Whole Grain, 3 cup
    Olive Oil, 1 tbsp
    Sesame Oil, 1 1tsp
    Peas and carrots, frozen, 84 grams
    Morinaga Tofu extra firm silken, 84 gram(s) (diced)
    Mushrooms, fresh, 3 medium (diced)
    Peppers, sweet, red, raw, diced (1 cup)
    Onions, raw, .5 small (diced)
    Low sodium Vegetable Broth, .5 cup
    Sambal Oelek (or some chili paste) 1tsp

Tips

Sometimes I add an egg at the end (mix egg well, add to rice and veggie mix and cook till egg is cooked). I kept it out of the recipe to keep it vegan. The recipe is fine without it. Also one can add more tofu or extra chili paste as desired. Salt as desired. I like to keep low sodium so I don't add extra salt.


Directions

Cook rice according to the recipe on the packaging. (I use the rice cooker)
Saute onion and olive oil for a minute, add pepper and mushrooms, saute a bit longer. Add broth. Add peas and carrots. Saute. Add tofu. Saute. Add soy sauce. Mix. Add chili paste. Add more if you like spicy food.

Add water if you need.
