Ingredients

    8 oz. plain, low-fat yogurt
    1-2 tbsp. cilantro (or parsley)
    1/4 tsp. curry powder
    1 cup dry-roasted cashews
    1 cup chopped cucumber
    1 cup chopped red/green pepper
    1/2 cup chopped red onion
    4 pita bread rounds, split

Directions

Stir yogurt, cilantro, and curry together in bowl. Stir in cashews, cucumbers, sweet pepper, and red onion. Break pitas in half and spoon salad into pita rounds. Makes four half-pita servings.
