Introduction

This is a recipe that I got out of a magazine and lightened a little. It is fabulous for brunch or a lazy saturday morning breakfast. Serve with fresh fruit and a toasted english muffin. Ingredients

    1 cup nonfat cottage cheese
    3/4 cup Egg Beaters
    1/2 cup Kraft 2% sharp cheddar cheese
    2 - 4 tbsp fresh herbs (tarragon, chives, etc.) or spinach, chopped

Directions

Preheat oven to 350 degrees F. Place cottage cheese and egg beaters in blender and run on medium speed for 1 minute or until fully combined. Add half the cheddar cheese and blend for 10 seconds more. Pour mixture into a bowl and fold in the remaining cheese and herbs or spinach with a spoon. Pour into four ramekins or custard cups; place on a cookie sheet and bake 40 - 45 minutes, until puffy and starting to brown. Serve warm in ramekins.
