Ingredients

Whole wheat English muffin
Two slices of apple (Granny Smith is best)
2 oz Camembert, sliced thinly (could use Brie, see note)
Directions
Open the English muffin. Lay one slice of apple on each side. (I cut one slice off the apple, then take the next two slices for this recipe. You don't want a lot of skin or the apple slides all over the place.)
Put one ounce of Brie or Camembert slices on top of the apple.
Place both halves of the muffin, with apple and cheese, in a toaster over or under a broiler, and toast for a few minutes until the cheese is melty but not running all over.
Enjoy! Also good on a multigrain bagel or bread, but more calories.
NOTE: This would also be good with pear, or other cheeses.
Also, Camembert has a fewer cals than Brie, so I usually use that.
And eat the rest of the apple on the side.
