Ingredients

    10 medium tomatoes, chopped
    1/2 cup chopped fresh basil
    1/2 cup red wine vinegar
    1/4 cup olive oil
    3-4 shallots, chopped
    1 tsp salt
    1 pound angel hair pasta

Tips

Serve sliced italian sausage and grated parmesean cheese on the side for individuals wanting additional protein (and calories)


Directions

Chop tomatoes, basil and shallots. Combine oil, vinegar and salt, shake well and pour over rest of ingredients. Marinate sauce 1 hour in refrigerator.
Cook pasta in boiling water according to directions. Drain and rinse with cool water. Add sauce to pasta and chill several hours or overnight.
