Introduction
This dish will take a little longer to eat than regular hand-held tacos, and this is almost like having nachos. You can eat with a fork, or enjoy by picking up the flat pieces and eating with your hands! Delicious! Ingredients

Taco Shells (they will be broken in half and laid flat; I could fit 2 taco shells on my plate)
Fat-free refried beans (I love refried beans so I like to add a lot, but you can customize amount to your preference)
Reduced-fat shredded cheese (I used Sargento Mexican blend)
Onion (raw, chopped)
Tomato (raw, chopped)
Black Olives (sliced; I LOVE black olives so I add more)
Lettuce (chopped or shredded, add as garnish)

All amounts can be customized; I just loved this dish when I made it so I wanted to share!
Directions
Cook refried beans according to instructions on can.
Break taco shells in half (however many you want to use). Lay shells flat on the plate. Spoon refried beans onto taco shells. (It may help to spread the beans around a little bit, and flatten it onto the shells.) Sprinkle cheese over hot beans. Add onion, tomato, and olives. Top with lettuce.
I wanted my cheese melted, so after adding the onions, tomatoes, and olives, I stuck my plate in the microwave for 30-40 seconds.
Serving Size: 1 (or split it with someone!)
