Ingredients

    2 "chia eggs" (1 Tbsp chia seeds mixed with 3 Tbsp water) - you can replace with eggs or other egg replacement
    2.5 Tbsp maple sryup
    2.5Tbsp dark brown sugar
    1/2 cup apple sauce
    1/2 tsp vanilla
    1/2 tsp nutmeg
    1.5 cups whole wheat flour
    1/2 tsp both baking soda and baking powder
    1.5 cups grated zucchini
    1/2 cup walnuts, almonds or other nut of choice
    1 to 1.5 cups blueberries

Directions

Mix all ingredients together in order listed until combined but not over mixed. Pour into sprayed loaf pan or muffin tin and bake at 350.
Estimate cooking times:
-1 hour for bread (You may need to cover top with tin foil during the last 15 minutes to prevent over browning)
-20 minutes for muffins
