Ingredients

    2 cups oat bran
    1/4 cup firmly packed brown sugar
    2 teaspoons baking powder
    1/2 teaspoon salt (optional)
    1 cup almond milk
    1/3 cup egg white replacer
    1/4 cup molasses
    2 tablespoons flaxseed oil
    1 small banana, mashed
    2 tablspoons chopped pumpkin seeds

Tips

honey can be subbed for molasses and actual egg whites for replacer but if real egg whites used beat them slightly.


Directions

heat oven to 425. line 12 medium muffin cups with paper baking cups or spray bottoms with nonstick spray. combine dry ingredients; mix well. add combined milk, egg whites, molasses and oil; mix just till dry ingredients are moistened. fill prepared muffin cups 3/4 full. bake 15-17 minutes or golden brown
