Introduction

Ingredients

    1 tsp butter
    2 eggs
    1/2 cup flax seed meal
    1/2 tsp baking powder
    1 packet Splenda (or 1/2 tsp granular)
    1/2 tsp cinnamon (or other seasonings to taste)

Tips

Best warm - it gets a little dry as it cools.


Directions

In a large coffee mug, melt the butter in the microwave. Swirl the melted butter to grease the mug bottom slightly. Add other ingredients to the mug and mix thoroughly. Microwave on high for about 2 minutes, until the egg is fully cooked. (It will puff up out of the top of the mug, and then shrink back as it cools a bit.)
