Introduction
I tried to find a calorie count that used the salt and cream of tarter figured in. But I didn't see one that is why I am adding my recipe to the mix. Ingredients
-
3 eggs separated
3.5 oz avocado
dash of salt
1 tea. cream of tarter or baking powder
*optional ingredients could be chives, dill, chia or sesame seeds, cinnamon etc depending on the use of the roll. I can see these being a real hit with brunches and breakfast in our gluten free household.
Tips
With the change of avocado from the cream cheese this difference alone is a savings of 22 calories not to mention the savings in fat and addition of so many nutrients. So enjoy these as a lactose and gluten free Paleo bread. Win win for all of us.
Directions
Separate the eggs into separate bowls. Whites in smaller and yolks in small food processor. Add cream cheese to the yolks and cream of tarter or baking powder. Mix well. Do this first as egg whites brake down when left to sit.
In mixer beat egg whites and dash of salt until very stiff, they can be turned upside down without moving.
Gently add the yolk mix to white mix folding gently so the whites don't break down.
Spray cookie sheet with Pam and put 6-8 dollops on the pan depending on how big you want them. I did 8.
Bake at 325 for 25-30 mins. They need to be browned to be done. Enjoy, they almost taste like a croissant.
