Ingredients

    8 boneless skinless chicken thighs, chopped
    3 cups chopped fresh baby portobella mushrooms
    1 cup chopped bell pepper (any color)
    1 cup chopped fresh onion
    6 tbsp Smart Balance buttery spread

    Salt, 1 tbsp
    Garlic powder, 2 tbsp
    Onion powder, 1 tbsp
    Sage, ground, 1 tsp
    Basil, 2 tbsp
    Parsley, dried, 1 tbsp
    Pepper, black, .75 tsp
    *Flour, white, .25 cup
    Water, tap, 1.5 cup
    *paprika, smoked, 1 tsp

Tips

Make some rice to make it a more filling meal, or just have it like a stew. My daughter hates rice, and she loved it like that.


Directions

In a large pot, place the chicken with the smart balance, onions, peppers, and mushrooms and one cup of water, and cook for about 15 minutes. Add the seasonings and reduce heat and cook for an additional 25 minutes. Dissolve 1/4 cup all-purpose flour in 1/2 cup cold water, and blend into pot. Stir until thickened.
