    1 pint Fresh Figs (stems removed and sliced)
    2 cup baby arugula
    2 oz Gruyere cheese, sliced
    1 tablespoon fresh lemon juice
    2 teaspoons honey
    2 teaspoons chopped fresh mint
    2 tablespoons olive oil

Tips

Served with Summer Gazpacho instead of Fig, Arugula and Gruyere Sandwiches


Directions

Combind arugula, figs and cheese. Whisk together lemon juice, honey, mint, oil; pour dressing over top
and toss to combine.
