Introduction

Ingredients

    1 Cup uncooked Quinoa
    1 Large peeled cucumber, chopped
    1 Can Great Northern Beans
    1 Container Grape Tomatoes, chopped
    .25 Cups Extra Virgin Olive Oil
    Juice from 1 Lime
    1 Tbsp Cumin
    Salt & Pepper to taste

Tips

Add feta cheese or substitie any variety of beans to change the flavor of this salad.


Directions

Cook Quinoa as instructed and let cool to room temp. While Quinopa is cooking, prepare other ingredients. Mix all together in large bowl and let chill in fridge. Tastes best when its left overnight so flavors have a chance to mingle.
