Spinach, fresh, 2.5 cup
Feta Cheese, 2.5 oz
*Colby and Monterey Jack Cheese shredded, 0.5 cup
Pie crust, frozen, ready-to-bake, 1 crust, deep dish
Egg, fresh, whole, raw, 4 large
Milk, nonfat (skim milk), .5 cup
Sour Cream, reduced fat, .25 cup
Ham, extra lean, (5% fat), .33 cup, diced
Sage to taste
Salt and Pepper to taste
Tips
Try changing up the spinach for steamed broccoli, or exchange the ham for three slices of chopped bacon. I also like to add mushrooms sometimes. Serve with fresh fruit.
Directions
1. Preheat oven to 375 degrees
2. Add olive oil to a medium skillet, saute garlic and onion, until slightly brown, add spinach and feta cheese. Season with salt and pepper. Spoon into pie crust, top with shredded cheese.
3. In a medium bowl, whisk together eggs, milk, and sour cream. Season with salt, pepper, and sage. Pour into pastry shell, allowing egg mixture to combine with spinach mixture.
4. Bake in preheated oven for 60 minutes, until center is set. Allow to stand 10 minutes before serving.
