    low fat cooking spray
    1 onion chopped
    400 grams (14 oz) butternut squash, peeled & chopped
    2 tsp ground cumin
    850 ml (1 1/2 pints) vegetable stock (bouillon)
    salt & pepper to taste


spray medium saucepan with cooking spray
add onion & saute 3-4 minutes until begins to soften
add butternut squash & cumin, stir well
pout in the stock & simmer for 20 minutes until the squash is tender
remove from heat; blend in a food processor or with hand blender
season to taste
