Introduction

Number of Servings: 12

Ingredients

    3 Avocados (cubed)
    1 can of black beans
    1/2 Cup chopped Red Onions
    1 Yellow (or other colour) Pepper, Chopped
    1 Package Grape Tomatoes, sliced in half

    Dressing:

    2 tbsp Olive oil
    3 limes, juice and rind
    2 tsp garlic, minced
    1 tbsp Salt, yes...or it will be bland
    1 tsp Pepper

Tips

This will look like a very coarse salad. You may need to adjust the seasoning as this may be a bit bland without enough salt & pepper.


Directions

Cube avocado in a large bowl, add the juice of one lime to keep from browning. Open can of beans, drain and rinse until no more black juice comes out. Add to bowl with Avocado. Dice (small) red onion and add to bowl. Cut up peppers (not too small) and add to bowl. Slice tomatoes in half and add to bowl. Mix all ingredients for the dressing (what's left of limes) and pour over salad. Mix gently to not cream avocado too much. Refrigerate.
