Ingredients

1 c. bulgar wheat (quick cooking)- prepared according to directions
24 cherry tomatoes
1 large cucumber
1/4 c. red onion (or more)
1 c. chopped fresh parsley
1/4 c. Feta, reduced fat
1/4 c. Balsamic vinegrette
Salt and pepper to taste
Tips
For a flavor boost, add garlic, straight balsamic vinegar, or chopped fresh mint.
This salad keeps well in the fridge for 3-4 days.
Directions
Make sure the bulgar wheat is room temp or colder.
Chop all veggies and herbs to a size you prefer (I do 1/4 inch)
Mix everything together, including the feta and the dressing.
Add salt and pepper to taste.
