Introduction

A cleaned up, South of the Border Mexican Recipe. I have been told by friends that came over to eat before I started dieting that these were the best marinated fajitas they ever had. I have slightly revised the recipe removing some oils and reducing the calories. A cleaned up, South of the Border Mexican Recipe. * 1 limes, juiced
    * 1 teaspoon kosher salt
    * 1/2 teaspoon brown sugar
    * 1 teaspoon ground black pepper
    * 1 teaspoon ground white pepper
    * 1 teaspoon garlic powder
    * 1 teaspoon onion powder
    * 1 teaspoon chili powder
    * 1 teaspoon dried oregano
    * 1 teaspoon ground cumin
    * 1 teaspoon paprika
    * 1 jalapeƱo chile pepper, seeded and
    minced
    * 1 large handful fresh cilantro, leaves and
    stems, finely chopped

    * Chicken Breast (4oz per person)

    * 1 green bell pepper-cut into strips
    * 1 small onion - cut into strips

Directions

Directions:
* * * I usually marinate the meat for at least 24 hours before cooking. * * *
Add all the ingredients for the marinade together in a bowl and stir together. Add the meat and cover. Place bowl in refridgerator for 24 hours.
After the meat has marinated, I usually grill the meat on a bbq. You could also pan fry the meat in a hot skillet.
Pan fry the bell pepper and onion with some water on a medium heat.
Add the cooked meat and bell papper and onions together in a serving bowl.
Serve with your favorite "low fat" tortillas.
Enjoy!!!
