Ingredients

1 Low carb tortilla
1 cup butternut squash
1/4 cup canned or frozen black beans
2 tbsp each onions and peppers
2 oz. feta cheese
1 tsp nutmeg
1/2 tsp salt
Tips
Additional herbs, spices and veggies can be added, such as chilies, jalapenos, poblanos, sage, thyme, etc.
Directions
Bake or steam butternut squash until soft. Mash with salt and nutmeg. Saute peppers and onions until soft. Smear butternut squash across half a tortilla, sprinkle with black beans, pepper and onion mixture, and feta. Fold tortilla. Place in hot pan until tortilla is crispy and ingredients are hot. Cut into 4 wedges.
Serving Size: Makes 1 full quesadilla for lunch, or 4 1-slice servings as a side dish.
