Ingredients

    2 Large Lemons
    4 boneless chicken breasts
    salt and pepper
    1/2 cup flour
    4 Tblsp cannola oil
    1 small shallot or 1 clove garlic
    1 cup chicken stock
    3 Tblsp unsalted butter
    2 Tblsp fresh parsley

Directions

heat oven to 200. Halve one lemon.thinly slice one half.Juice remaining 1/2 and whole lemon
Cut breasts into thin cutlet. dredge in flour salt and pepper. heat 2 Tblsp oil in heavy skillet over med high heat. Cook cutlets 2 min on each side. Set in ovenproof dish. Remove all chicken. add garlic or shallot. Saute for 30 seconds. Add stock, lemon slices. heat and reduce by 1/3 about 4 minutes. Add lemon juice and simmer for 1 minute. Add butter until sauce thickens. Add pareley. Spoon over chicken and serve immediately over pasta.
