Ingredients

½ teaspoon olive oil
2 tablespoons diced onion
1/3 cup cooked brown rice
1 tablespoon chopped green bell pepper
1 (3-inch strip) carrot, chopped
1 tablespoon roasted red pepper from a jar
1 egg white, lightly beaten
½-teaspoon or more of low sodium soy sauce, to taste
Directions
1. In a pan, heat oil on medium-high heat. Add onion and rice. Stir and cook until onion is soft, 2 to 5 minutes.
2. Reduce heat to medium and add vegetables to rice mixture. Cook the mixture 5-7 minutes.
3. Spread the mixture out to the sides of the pan, leaving space in the middle for the egg white.
4. Add the egg white, and scramble until cooked firm.
5. Mix the egg white with the rice and vegetables.
6. Then sprinkle with soy sauce to taste.
