Ingredients

    3 large potatoes, peeled and cubed
    2 tbsp olive oil margarine
    1/4 cup daiya cheddar cheese
    3 cloves garlic
    3 stalks green onion
    A dash of salt
    1 medium onion, diced

Tips

To make it more creamy add about a 1/4 cup of unsweetened almond milk.


Directions

Pre-heat the oven to 450 degrees. Boil the potatoes in a pot of water till tender then drain the water, and place them in a casserole dish. Heat up the margarine in a pan, and add the onion, green onion, garlic, and salt. Cook for 2 minutes, and then pour this mixture over the potatoes. Sprinkle the daiya cheddar shreds over the potatoes, and bake in the oven for 20 minutes. Serve hot.
