Ingredients

    1 cup oat bran (serving is 1/3 cup (40 grams) but this recipe needs 1 cup or 120 grams)
    1/2 cup buckwheat flour
    1/8 teaspoon salt (optional)
    1 teaspoon baking powder
    1/4 cup eggbeaters
    4 tablespoons agave nectar
    1/4 cup almond coconut milk
    1/4 cup canola oil
    1/4 cup dried cranberries (like "craisins")
    1/4 cup chopped walnuts

Tips

This recipe can be lightened up by substituting unsweetened applesauce for the canola oil and/or eliminating the walnuts.


Directions

Preheat oven to 375 degrees. Spray muffin pan with cooking spray. Mix dry ingredients in a mixing bowl and set aside. Mix all liquid ingredients together and stir into the dry ingredients. Fold in cranberries and walnuts. Spoon evenly into 6 muffin tins. Bake at 375 degrees for 10 - 12 minutes.
