Ingredients

2 riped bananas, mashed
1 large zucchini, grated
1/4 cup honey
1/4 cup egg whites
1/4 cup extra virgin olive oil ( can use coconut oil)
1/2 cup blueberries, fresh is best
1/2 cup blackberries, fresh is best
2 cups old fashioned oats
3 tbsp flax seeds
1 tbsp cinnamon
1 tbsp stevia
1/2 tsp baking powder
1/2 tsp baking soda
Tips
These muffins stay "gooey" even when done.
Directions
In one bowl, mash bananas. Add other wet ingredients.
Grate zucchini. Squeeze out extra liquid. Add to banana mix.
Add dry ingredients into a food processor. Process until a flour like consistency.
Slowly add dry mix to wet mix, slowly.
After combined, fold in berries.
Bake for 45 minutes or until toothpick comes out clean at 300 degrees.
