Ingredients

    1 leek, chopped
    Cup of chopped celery
    2 cups chopped Swiss chard
    250ml low fat plain yoghurt
    Vegetable stock cube
    1 cup vegetable stock
    Tablespoon chia seeds

Tips

I cook until just cooked to keep the silverbeet/chard bright green, and blend until not quite smooth.


Directions

Heat the stock to boiling, add vegetables and cook until soft. Add tbspn chia seeds. Blend with stick blender, add yoghurt and reheat, but don't boil.
