Ingredients

    2 15 oz cans beans of choice (Pinto, cannelli, and/or garbanzo(chickpeas))
    2 egg substitutes or eggs*
    1/4 cup nutritional yeast (or Parmesan cheese)
    1/2 cup bread crumbs
    1/2 cup oats
    2 Tbsp ketchup
    1 Tbsp soy sauce
    tsp garlic powder
    tsp onion powder
    tsp dried parsley and oregano
    1/2 tsp salt and pepper

    1 vegan egg= 1 Tbsp flax or chia mixed with 3 Tbsp water

Tips

These are very versatile!
-Heat up in marinara sauce and serve as subs or pasta.
-Crumble over rice with veggies and sauce of choice
-Crumble into scrambled eggs.


Directions

Preheat oven to 400.
Spray a baking sheet.
Puree together all ingredients.
Form into about 26 meatballs.
Place onto baking sheet.
Bake 20 minutes or until browned, turning half way.

Serving Size: Makes 26 balls. Serving size should be about 4 balls per person.
