Ingredients

    1 small apple - peeled
    2/3 c. fancy shredded part skim Mozzarella cheese
    1 whole wheat tortilla (I think mine was an 8")

Tips

For a softer apple, you may skip putting the tortilla in the oven alone for the first 5 minutes and simply build your pizza and place in the oven for the full 10 minutes. I eat this as my lunch a lot. It makes a perfect whole meal!


Directions

Heat oven to 350 degrees. Place tortilla on pan sprayed with non-stick spray and place in oven for 5 minutes. Peel apple then using apple peeler, shave apple into thin strips (I shaved in a cirlce around the apple, not up and down). Remove tortilla from oven, flip tortilla over and sprinkle 1/2 of the cheese on it. Place apple shavings all over tortilla and top with remaining cheese. Put back in oven and bake for an additional 5 minutes. Cut tortilla with a pizza cutter into 8 pie shape pieces. :)

Serving Size: Makes 1 serving
