Introduction

Just whatever was left in the pantry/freezer. Just whatever was left in the pantry/freezer.

Ingredients

    Dried legumes, mushrooms, frozen vegetables, tomato sauce.

Directions

It's best to soak the dried stuff first for a few hours, and I fried the mushrooms in some olive oil to add flavour, but apart from this it's super easy.
Just throw it all in to a pot on med- high and let it reduce to a stew like consistency, then stir in more water as it thickens up and keep this up until the legumes are soft.
Depending on my mood, from here I will either reduce it right down so it is stew like (awesome on toast in winter with heaps of tobasco sauce) or I add more water to keep it soup like.

Serving Size: Makes about 10 x 2 cup servings depending on water used.
