Ingredients

    5 pounds skinless boneless chicken breast
    1 jar taco sauce
    1 package taco seasoning mix
    4 cups water
    4 chicken bouillon cubes
    1/4 cup lime juice

Tips

The net carbs of this dish will really be less than the nutrition calculator shows since a lot of the sauce will stay in the crock pot.

I can't say enough good things about Mama Lupe's Low Carb tortillas. They are absolutely delicious, even if you aren't watching your carbs. They are often hard to find, however -- I recommend ordering from www.netrition.com.

You can make this dish as spicy or mild as you wish depending on the taco sauce and seasoning mix you buy.


Directions

Place chicken in slow cooker. Add all other ingredients and cook on low for 8 hours.

Remove chicken from slow cooker and shred.

Use chicken on a taco salad, or on your favorite tortillas or taco shells. I use Mama Lupe's Low Carb Tortillas (super yummy and only 3 grams carbs per tortilla). Add whatever taco toppings you like!
