Introduction

Two of our favorite summer fruits star in this simple yet sophisticated salad. Two of our favorite summer fruits star in this simple yet sophisticated salad.
Number of Servings: 4

Ingredients

    8 cups arugula
    2 ripe peaches (about 1 pound), washed and cut into thick slices
    1/4 teaspoon honey
    1 tablespoon white wine vinegar
    1 tablespoon vegetable oil
    1 cup blackberries
    1 ounce parmesan cheese, grated



Directions

Place the arugula in a large salad bowl.
Preheat a grill to medium. Grill peaches for two minutes per side, then immediately toss with the arugula.
In a small bowl, combine the vinegar and honey, then whisk in the oil.
Pour the dressing over the greens, and toss to coat.
Garnish with the blackberries and cheese.


Serving Size: Makes 4 servings, 2 cups per serving
