Introduction

Ingredients

Basic recipe is:
3 c. rolled oats
1/3 c. oil of choice
1/3 c. liquid sweetener of choice (honey, maple syrup, rice syrup, agave)
1/3 c. brown or white sugar (1/4 c. works fine too)
May add one cup (total) of any mix-ins you like: sunflower seeds, chia seeds, hemp seeds, coconut flakes, puffed rice, kamut, or spelt, raisins.
If adding chocolate chips--add only AFTER the oatmeal is toasted in the oven--may mix in while still warm if you want the chocolate to "clump" a bit with the granola.
Tips
The granola will firm up when cooling--it might seem a bit sticky when you remove it. Do NOT overcook--the oats will taste burnt if too dark.
Directions
Preheat oven to 325 or 350.
Mix oil, sugar, and syrup on stove in saucepan on medium until completely dissolved/starting to boil.
Remove from heat--add in vanilla or almond extract (optional).
In large mixing bowl pour the hot liquid mixture over the dry ingredients (minus chocolate chips if using).
When thoroughly mixed, spread evenly onto two parchment-lined cookie sheets.
Once in oven, check every 5 minutes and stir occasionally, until desired level of toasting--usually about 15-20 minutes.
Remove and let cool. May keep for two weeks in covered container (if it is not gobbled up first!).
