Introduction

These make a great evening snack, but could also be breakfast These make a great evening snack, but could also be breakfast
Number of Servings: 1

Ingredients

    Crepe
    1 egg white (or egg substitute)
    1 Tablespoon of milk
    1 packet sweet and low (or sweetener of your choice)

    Topping
    1/2 cup frozen fruit (anything you like would work)
    1 packet sweetener

Directions

Crepe
heat a small frying pan over med/high heat
mix egg white, sweetener, and milk very well
spray pan with butter spray (or anything else to grease it)
pour egg mix into pan, allow to solidify somewhat then fold in half (like an omelet) and cook until slightly browned and not runny

Fruit topping
mix fruit and sweetener
zap in microwave for 1 minute to make a sauce

I put the topping on top of the crepe, and then add a dab of whipped cream on top!

    This sounds good. How about using Suzanne Somers' Somer Sweet? It tastes like real sugar and is all natural, no artificial chemicals. Check out her website. - 10/14/08

    Must one use whole milk?? I made this with non-fat milk and the crepe was SO runny that I ended up scrambling the fruit and crepe like scrambled eggs - LOL! Still tasty, but not quite in crepe format... - 6/24/08

    Not a bad idea. I don't care for sweet & low, and I prefer round crepes wrapped around the filling. I'll give this a try and leave a new comment when i do - 3/11/08
