3 cups dry red beans
6 cups water
1 Tbl olive oil
1 red onion chopped
2 stalks celery chopped
3 cloves garlic finely chopped
2 Tbl whole oregano crushed
1.22 lbs 93% lean ground beef
2 Tbl ground chilli
32 oz tomatoe sauce
2 tsp ground cumin
1 Tbl cinnamon
2 large jalapinos seeds removed and diced
4 parred and chopped carrots
1 tsp salt
1 Tbl granulated sugar
1 tsp cayenne pepper
Tips
Great for a crowd or to freeze servings for later.
Directions
Rinse and soak 3 cups of red beans overnight in 6 cups of water.
The following morning saute onion, garlic, celery and oregano. Add beans, water, tomatoe sauce, ground beef, carrots, and spices. Bring to boil and then transfer to large slow cooker. Cook on high for 5 hours.
Taste and adjust spices to your liking.
