Ingredients

    2 lbs of sweet or hot Italian sausage
    1 large sweet onion chopped
    2 tablespoons of minced garlic
    1 28 oz can of diced tomatoes
    1 7 oz jar of pesto sauce
    16 oz. of cooked ziti or penne pasta
    10 oz. frozen spinach
    16 oz. shredded part skim mozzarella cheese
    1 cup grated parmesan cheese

Directions

Heat large saucepan over med-high heat. Add sausage, onion, and garlic and saute until sausage is cooked through. Add tomatoes with juice to pan. Simmer until sauce thickens slightly, about 10-15 minutes. Stir in pesto. Season with salt and pepper if desired.

Preheat oven to 375 and lightly oil 13x9 glass baking dish. Combine pasta, spinach, 12 oz of mozzarella and 3/4 c Parmesan cheese in large bowl. Stir in tomato sauce/meat mixture. Transfer to baking dish. sprinkle remaining 1/4 cup of Parmesan cheese and remaining mozzarella cheese over the top. Bake until sauce bubbles and cheese melts, about 25-30 minutes.
