Ingredients:
1/2 Cup Coconut Oil
1/2 Cup Coconut Sugar
2/3 Cup Honey (you may be able to reduce this to 1/2 cup)
1/2 tsp Sea Salt
1 tsp Vanilla
3 Cup Old fashioned rolled oats
1 Cup Unsweetened Coconut
1 Cup Mixed nuts ( I used Cashews & Walnuts)
1/2 Cup Raw Sunflower seeds
1 Cup dried fruit ( I used cranberries and blueberries)
3/4 Cup Chia seeds
1/2 Cup ground flax seed
2 Cup Brown rice crisp cereal
Directions
DIRECTIONS:
Preheat oven to 350 degrees and line a 9 X 13 Cake pan with parchment paper.
Put your oats, nuts, sunflower seeds,coconut, chia seeds and flax on a baking sheet and toast in a 350 degree oven for about 15 minutes (stirring occasionally to brown evenly and avoid burning).
While that's toasting, Place your coconut oil, sugar, honey, salt and vanilla in a large pot and heat on medium heat until the oil melts and sugar is nearly dissolved.
Pour your oat mixture into your large pot and add the dried fruit and rice crisp cereal. Stir really well.
Pour mixture into your lined cake pan and using another piece of parchment paper, press mixture firmly and evenly into the pan.
Allow to cool for an hour or two, lift the granola bars out of the pan using the corners of the parchment paper. Cut into bars and enjoy!
