Ingredients

    Banana, fresh, 1 cup, mashed
    1/2 cup Creamy Natural Peanut Butter (salted)
    3/4 cup Brown Sugar, packed
    1/4 cup Granulated (white) Sugar
    2 eggs
    1/2 cup milk - I used Pure Almond unsweetened, plain
    1 tsp Cider Vinegar
    splash Vanilla Extract
    2 Tbsp Flax Seed Meal (ground flax)
    1.5 cup (heaping) Bob's Red Mill White Rice Flour
    1/2 (heaping) Bob's Red Mill Potato Starch
    1/2 cup (level) Bob's Red Mill Tapioca Starch
    1 tsp (level) Xanthan Gum
    1 tsp Baking Soda

Tips

I added the flax seeds for a little boost, but they are optional.


Directions

Blend wet ingredients (through vanilla) together. Mix in the rest until just incorporated fully (no traces of flour). Spoon into 12 lined and greased muffin cups. Bake at 350F for 20 mins or until golden brown and puffy.
