Introduction

Ingredients

    Yellow Sweet Corn, Canned, 1.25 cup
    Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.)
    Extra Virgin Olive Oil, 2 tbsp
    Pepper, red or cayenne, 1 tbsp
    Onions, raw, .25 cup, chopped
    Garlic powder, 2 tbsp
    Lawry's Seasoned Salt, a goodly sprinkle
    Sage, ground, 1 tsp

Tips

I buy low sodium corn and rinse it for even less sodium when cooked. The amount of cayenne listed makes for spicy food, so adjust according to your chili meter. The next time I make it, I am going to add some drained washed green beans.


Directions

Preheat oven to 350 degrees ( may vary based on oven mine gets really hot)

Wash, peel and dice potatoes in to bite-sized pieces.
Drain and rinse corn (this remove some of the salt)
Dice up peeled, rinsed onion (this will keep the tears from flowing.)

Put olive oil in the bottom of a pyrex dish that has a lid.

Place potatoes, onions, and corn in the dish
Place seasonings in the dish
Mix until everything is covered in oil and spice and well mixed.
Place lid on and put in oven
Cook for 60 mins ( give or take depending on your oven)

Serving Size: Makes 5 1 cup servings or there abouts
