Introduction

Ingredients


    Ingredients:
    1 - Pork Tenderloin
    1 cup of garden vegetable cocktail
    1 can of black beans, rinsed & drained
    3 cloves Garlic
    1 medium Chopped Yellow Onion
    2 - 3 small stalks of Celery, chopped
    1 cup frozen corn niblets
    1 jalapeno pepper, finely diced
    seasoning, to taste - cumin, chili powder, smoked paprika, sweet paprika, salt & pepper

    3/4 cup White Rice, not cooked

    8 - 10" Whole Wheat Tortilla Wrap
    1 cup srhedded old Cheddar Cheese
    16 tsp Sour cream, fat free (2 per wrap)

Tips

You can add any of your favourite ingredients.
Can also top with salsa before wrapping.


Directions

Place the 1st 8 ingredients in a crock-pot. Add additional water if necessary to almost completely cover the pork-loin.
Cover & cook on high for 5hrs.
Break up the meat into smaller chunks with a wooden spoon & add the uncooked rice. Stir, replace lid.
Cook for another hour. The pork should pull apart with the wooden spoon. If not, cook a little longer.
The liquid will be absorbed by the rice.
Once everything has been mixed, spoon about 1 cup into each tortilla wrap, top with shredded cheese & 2 dollops of cream cheese.
Wrap tightly, folding in the ends & serve.
Makes 8 wraps.
