Ingredients

    What you need:
    1 pound of dry great northern beans
    2 chicken legs (can be any piece of the chicken.. breast don't do so well as they get tough in long cooking).
    3 Large Potatos cut into chunks or cubes



Tips

Put butter, salt and spices in your bowl. If there is a spice you like cooked in put it in 15 mins before you serve and stir. If you put salt in the beans while they are cooking you will have undercooked or tough beans.


Directions

Rinse you beans. Put beans and HOT water (does not have to be boiling just hot) in an 8 quart stock pot (Use what you have but the boiling beans produce foam that you skim off before starting simmer so be aware it gets tall fast). Once you have brought to a boil watch for the beans to produce a white foam. Turn down the burner (low or simmer) and skim off what foam you can. If you beans are floating don't worry just don't skim them all off. Add chicken legs and diced or chunked potato and simmer till done. (here is where you can add ham, carrot, or any other hard veggie you like.)

Serving Size: Makes an 8 quart stock pot full
