Ingredients

    Chicken broth- Trader Joe's, organic, low sodium, 5 servings
    Parmesan- Frigo, shaved, 0.25 cup
    Spinach, fresh, 2 cup
    Green Beans (snap), 2 cup
    Carrots, raw, 2 cup, chopped
    Baby lima beans- Great Value, 5 serving
    Sweet peppers (bell), 1.5 cup, chopped
    Trader Joe's Organic Tomato Sauce, 7 serving
    Trader Joe's Organic Diced Tomatoes, 3.5 serving
    Cannellini Beans- canned, 1.75 cup
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic- 5 cloves
    Zucchini, 2 cup
    Squash, yellow, 2 cup
    Rosemary- Fresh ONE SPRIG (wouldn't let me choose this above)
    Basil- Fresh 2 Tbsp
    Bay Leaves- Fresh 2 leaves (WHOLE)
    Italian Parsley- Fresh, chopped 0.25 cup
    Salt & Pepper to taste

Tips

Top with fresh herbs and/or extra Parmesan cheese, if desired.


Directions

Spray slow cooker with cooking spray (I used olive oil spray). Combine all ingredients except for spinach, zucchini, and squash and cook on HIGH for 8 hours. About 45 minutes before the soup is finished add the remaining ingredients.
