Ingredients

    Boneless Chicken Breast Cut into strips
    1 cup coconut flakes
    1/2 cupe Panko bread crumbs
    2 egg whites

Tips

I like to put these on top of a salad. the coconut brings great flavor, so you wouldnt need to use much dressing on your salad. I also make these on Sundays and have at least 2-3 days for lunches.


Directions

Cut Chicken into strips. Place chicken in a bowl with egg whites and let soak for a couple of minutes. Mix coconut flakes with bread crumbs. Take the chicken strips and roll in the coconut flake/bread crumb mixture making sure to cover the whole strip. Place on baking sheet. Repeat for all the chicken. Bake at 400 degrees for 30 minutes. Let sit for 5 minutes before serving.
