Ingredients

Meatloaf:
2 pounds lean ground beef
1 TBSP prepared mustard
2 tsp paprika
1.5 tsp salt
1.5 tsp thyme
1.5 tsp basil
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1/4 cup panko bread crumbs
4 oz. fresh mozzarella
Sauce
2 8oz cans tomato sauce
1 6oz can tomato paste
1 tsp minced garlic
6 drops liquid sucralose
1 tsp oregano
1 tsp basil
Tips
the majority of the carbs in this dish come from the tomato sauce, so you can reduce or eliminate the sauce if you need to reduce the carb count.
Directions
For the meatloaf, combine all ingredients except mozzarella and mix well.
Use a 1 qt. square casserole dish. Place half the meat mixture in the bottom of the dish. Spread the sliced mozzarella over the meat mixture, then put the remaining meat mixture on top. Bake at 375 degrees for one hour.
For the sauce, mix all ingredients in a sauce pan and simmer for 15 minutes.
Slice meatloaf into 10 pieces, and serve the sauce on the side for everyone to top their own meatloaf.
