Ingredients

    500 Grams of high glutten finely ground flour
    325 grams of water (weight not volume)
    10 grams of salt
    3 grams of yeast

Tips

This is a high hydration recipe. Take out 1/2 before rolling dough. It will need more flour!


Directions

Mix water yeast and salt
Add flour
Mix for 4 minutes.
Leave out for 20 minutes (to rise)
Break into 5 balls
leave in fridge for 48 hours

Serving Size: 1/4 of one pizza - recipe makes 5 pizzas
