Introduction

This salad is a combination of fresh veggies and canned beans. It is a very satisfying snack or cold side dish with a slightly sweet but tart bite. I make a big batch and leave it in the refrigerator and eat on it all week. This salad is a combination of fresh veggies and canned beans. Ingredients

    2 cans cut green beans (drained)
    1 can cut wax beans (yellow) (drained)
    1 can light red kidney beans (rinsed)
    1/2 yellow bell pepper (chopped coarsely)
    1/2 red/orange bell pepper (chopped coarsely)
    1/2 medium onion (chopped coarsely)
    5 oz grape tomatoes (cut in quarters)

    3/4 cup rice vinegar
    3/4 cup apple cider or white vinegar
    1-1 1/2 cup water ( to dilute vinegar)
    2 Tbs. splenda granules
    1 tsp Mrs. Dash garlic and herb seasoning



Tips

You can adjust the flavor by add spice blends that you like or even use a packet of make you own Italian dressing such as Good Seasons. Use it as a side dish or an afternoon snack. Hope you Enjoy


Directions

Combine Vinegars, Sugar, Mrs dash, and 1 cup of water mix and let set for a couple of minutes. At this point adjust to your taste buds. You may want to add a little more water, sugar and Mrs Dash. (Should be slightly sweet but tart.)
Combine all ingredients together in large covered bowl and let marinade in refrigerator at least 5 hours or overnight for best flavor.
