    1 pound ground chicken
    2 slices bacon - cut into 1/2 inch strips
    1 vidalia onion - chopped
    1/4 green pepper - chopped
    1 can mixed or kidney beans - drained and rinsed
    1 clove garlic - finely chopped
    2 cups fresh tomato puree (skin and seeds removed)
    1 cup chicken broth
    1/2 cup brown rice
    1 tsp cayenne powder
    1 tsp black pepper
    1 tsp salt


Brown chicken and bacon strips in large pot on medium heat. When no more pink in chicken add onions, garlic, peppers and continue cooking until onions are clear. Add tomato, broth, rice, beans and seasonings. Reduce heat and simmer until rice is cooked.

Serving Size: makes 4 servings
