Ingredients

    Extra Virgin Olive Oil-1 tbsp
    Red Onion Raw 1 cup
    Cumin seed, 0.25 tsp
    Garlic 2 cloves
    Cilantro / Coriander, fresh - 1/4 cup
    1 Tbs. chopped fresh mint
    Shrimp, cooked, 4 oz
    Indian, Aromatic Basmati Rice 1 cup(cooked)
    Peas, frozen, 1 cup
    AH - Sriracha Hot Sauce 1 TSP Serving
    Kikkoman Low Sodium Soy Sauce, 1 tbsp
    Paprika, 1 tsp
    1/2 cup coconut milk (optional)

Directions

Have the cooked rice ready.Heat the oil. Add the cumin seeds-do not let it burn. Add the minced garlic till it almost turns brown. Add the onion and fry till transparent. Add the shrimp. Add the coriander and mint paste, peas, soy sauce, sriracha sauce and paprika. (Add coconut milk). Cook for about 5-8 minutes. Add the cooked rice. Mix well and serve. You can garnish with coriander leaves if needed.
