Ingredients

    1/2 cup bread crumbs
    3 3/4 cups extra-broad egg noodles
2 1/2 cups asparagus, cut into 1/2" pieces
    1/4 cup flour
    1/2 tsp dried thyme
    1 cup skim milk
    3 cloves garlic, minced
1 cup reduced sodium chicken broth
    2 tsp I can't believe it's not butter light
    1 medium onion, chopped
    1 Tbsp lemon juice
8 oz lean ham, sliced into 1/2" cubes
    1/4 cup chopped parsley
    Salt & pepper, to taste
    2 Tbsp Parmesan cheese, shredded

Directions

1. Preheat oven to 450 degrees.

2. Cook pasta in lightly salted boiling water per package instructions for al dente, about 7 minutes. Add asparagus and cook 1 additional minute. Drain.

3. In a medium sized bowl, combine the flour, thyme, salt and pepper and mix. Slowly add the milk and broth, stirring with a whisk until well blended.

4. Melt the butter in a medium saucepan over medium-high heat. Add the onion and cook until slightly softened, about 4 minutes. Add milk mixture and cook until thickened, about 4 minutes, stirring constantly. Remove from heat, and stir in lemon juice.

5. Combine the pasta mixture, milk mixture, ham, and parsley in a large casserole dish and sprinkle with bread crumbs and cheese.

6. Bake 10 - 12 minutes or until filling is bubbly and topping is golden.
