Ingredients

1 tsp olive oil
1/4 cup hoisin sauce
1/4 cup low sodium ketchup
1 tsp lite soy sauce
2 cloves garlic, minced
1/8 tsp ground red pepper
1 lb lean pork tenderloin, trimmed, cut into 1/2" pieces
Salt & pepper, to taste
2 tsp sesame oil
1 cup zucchini, sliced
1 large red bell pepper, sliced
1 tsp ginger
1/2 cup green onions, chopped
1 tsp sesame seeds
Directions
1. Heat canola oil in a large nonstick skillet over medium-high heat. Combine hoisin sauce, ketchup, soy sauce, garlic and red pepper and stir until blended; set side.
2. Add pork to pan and sprinkle with salt and pepper. Stir fry 5 - 6 minutes or until no longer pink. Remove from pan and set aside.
3. Add sesame oil to pan. Add zucchini, onion, bell pepper, and ginger and cook 4 minutes or until bell pepper is crisp-tender. Stir in pork and add hoisin mixture to pan; toss to coat. Sprinkle with sesame seeds and serve immediately.
