Threw together items I had on hand. This has a lot of good vitamins and minerals. It is higher calories but very nutritious. Plus you don't have to eat the whole serving. It is a plate full. Ingredients
Brown rice (2/3 cup cooked),
Celery, raw, 1 stalk, large (11"-12" long)
Carrot, fresh (1 medium)
Peas, frozen,1/2 cup
Frozen Shrimp (cooked Salad) (3oz)
Onions, raw, 1/2 cup, chopped
Garlic, 3 clove
Kikkoman Lite Soy Sauce, 1 tbsp
Extra Virgin Olive Oil, 1/2 tbsp
Sesame Oil, 1 tsp
Egg, fresh, whole, raw, 1 large
Mushrooms, fresh, 2 medium
Directions
1) Chop onion, celery, carrot, and mushrooms to pea size.
2) Mince the garlic cloves. Put the egg into a bowl and mix it up.
3) Put the olive and sesame oils into a large frying pan and heat the oil. Saute all the chopped vegetables until tender.
4) Add the shrimp and the peas. Cook until thawed.
5) Add the egg and cook until done.
6) Top it off with some soy sauce and enjoy.
